**** Fosh Lab has only been a temporary project. In the meantime, it closed again.****
Probably nobody has influenced contemporary Mallorcan cuisine more than Marc Fosh. For over a decade he has run some of the most interesting restaurants, and a couple of great chefs have come out of his kitchen. My personal favorite has always been his Tasca de Blanquerna where you could sit right at the counter and watch the cooks preparing your meal with artistic precision. Too bad, the Tasca closed about three years ago. But just last week it got an exciting successor with Fosh Lab. We had to celebrate a birthday, an exam and a new job – so this was the place to spend the night. And we were enthusiastic about the performance of the talented young team around chef Raúl Garcia Floro and chef de rang Giorgia Scaramella.
The few tables in the small restaurant face the open kitchen, so you can follow the preparation of the food life and on a big screen atop the stove. Although they operate in the spotlight the kitchen crew seems to be totally at ease. There is but one weekly changing menu – let me tell you, it’s fabulous. Our’s consisted of about ten most delicately composed dishes, each single one a small sensation for our taste-buds as well as our eyes. Just to give you an impression: we had chilled melon consommé with smoked pancetta, carpaccio of red prawns, filet of wild sea bream, and lamb with a mix of local herbs, cooked sous vide. The stuffed raspberries, one of the two deserts, were just beyond imagination. If there were a recipe for happiness this is the laboratory that found it.
When I ran into Marc Fosh the next day, we talked about his new place for a while. While his star-rated signature restaurant Marc Fosh (a.k.a. Simply Fosh) is well-established by now, the Lab for him and his team offers the possibility to continue their experiments with the vast creative potential of the mediterranean kitchen more freely. And to get in touch with the people who enjoy their fancy culinary results. „I think we have a great team at the lab, who is really good at that,“ Marc asserted. I told him that I absolutely agree.
Although I won’t even come close to Raúl’s cuisine, I really feel inspired now to try a few new things in my own kitchen. Island and sea offer all you need – the freshest fish and produce plus an innovative mix of cultures and concepts, tradition and innovation: The essence of Mallorca.
