Low murmur of conversation, laughter and the clinking of glasses fill the air. Warm light is reflected by marvelous tiles, elegant mirrors and filigree metal sculptures. The curved sandstone arches on the ceiling reveal the noble old mansion. And from the bar you can watch the passers-by on magnificent Carrer Concepció. In no time, Xalest became one of Palma’s hottest restaurants.
International classics top off the mediterranean menu with a creative contemporary twist. Best shared and enjoyed with friends. This way you can try many different plates. Like the saam de panceta, grilled bacon wrapped in a lettuce leaf. Followed by tacos with ceviche from sea bass and roasted veggies, marinated in a fine mustard sauce. And the oxtail sandwich just melted on our tongue. Reminding us of a famous Santa Catalina tapas bar. And that’s for a reason.
Xalest is a Catalan expression you would use on a morning when you wake up in high spirits and full of energy. For Xema Álvarez the restaurant is just like the beginning of such a new day. During the wake of the pandemic, the young Mallorcan chef had to close fabulous Catalina La Fina. And we all grieved over the loss. With Xalest he now embarked on an even more exciting culinary journey.
