Dinner at Clandestí feels like a culinary journey along a route of Mediterranean dishes seasoned with anecdotes, contemporary music and fancy illumination. Pau Navarro is chef and DJ of this speakeasy restaurant that has been one of the hot tips among foodies on Mallorca for a couple of years, now.
In the Garage
Clandestí also accounts for its name, it is hard to find behind an iron shutter in a side street of Carrer Blanquerna. Only the orange sign with the crossed beater and carving knife tells you that you have reached your destination.
Front Row
When the gate eventually opens, Pau welcomes the guests and shows them to their place along the countertop. Couples and small groups of friends are excited to indulge into a secret menu of ten to twelve extraordinay dishes, prepared and arranged at the bar right in front of them.
Rock and Roll Heart
Whether you go for the wine paring or not, you always get a music pairing. Like an entertainer the chef introduces each single course, and garnishes it with a song that he chose specifically for the dish. So much fun to watch Pau with a panhandle in one hand and the iPhone in the other while explaining about the food, the music or whatever question came up.
Change of Seasons
The dishes at Clandesti are inspired by the season and by local specialities found on the market in the morning. And Pau loves to juggle wildly with the ingredients. Tender raw fish contrasts with crispy garnish, the whole thing nice and spicy. Like the tuna paste with Sardic bread.
New Sensation
Or the strawberry-anchovy-avocado dish with a perfect touch of wasabi. He combines artichoke with sobrassada, raw gambas with tangerine and a salsa of almonds. Each of the dishes is a new and thrilling sensation on your tongue.
Sealed with a Kiss
Suddenly all the lights go out, it’s time for dessert. The bar which is changing its color with the courses turns a bright pink. And you get a plate with the perfectly shaped kiss lips made of passion fruit. No silverware needed to return the delicious kiss.
