We have all been there: you passed a street ever so often and suddenly discover something which you had not noticed before. This happened to me with Can Trispol, the wonderful small bar and restaurant hidden in a rear street of Sa Gerreria. I loved it right away for its intimate atmosphere, its super friendly staff and its unique menu. Next to several tasty tapas and salads Can Trispol focuses on llonguets, the traditional Mallorcan bun. However nicely reinvented.
Llonguets are experiencing a true revival lately. When Jaume Pardo and Sergi Adrover opened up Can Trispol three years ago, they did some serious market research for the best llonguets in town. They found them at Horno del Gloria, one of the oldest bakeries on the island that dates back as far as 1229, so Can Trispol’s menu tells the reader proudly. And offers them in about a dozen fancy ways like nowadays burgers. The llonguets at Can Trispol come veggie, with meat, sobrassada or chicken, topped with fruit or salad, and often with nuts or seeds. My favorite is Llonguet Coitja with a slice of spicy pork.
For me Can Trispol feels like a friend’s living or dining room – a place to belong to and feel completely at ease. That’s no surprise because Jaume and Sergi were careful to create a personal interior using vintage furniture from their families: small wooden tables, old clocks along the wall, bookshelves, soda siphons, an ancient radio, orange crates behind the cozy bar. Whether you stop by for lunch or dinner, be sure to make a reservation. The few tables and the seats along the bar are always quickly taken.
