What looks like a music sheet on your plate is actually part of a whole culinary symphony. The composer, Joan Marc, is one of Mallorcan most favoured chefs. I have always loved his creative style and was very happy when his effort was rewarded with a Bib Gourmand. Just now Joan introduced a wonderful menu degustación, a sequence of eight courses made from the freshest local produce following traditional recipes with a modern approach. The hake in salt crust was probably the most delicious I ever had, and the same goes for the meatball from porc negre with apricot. So simple and yet so unique. Standing ovations!
